Instructions:

1. Prepare the ribs:

  • Cut the ribs into bite-sized pieces and rinse them with salt water.
  • Parboil the ribs in boiling water for about 3-5 minutes to remove any odor, then drain.

2. Marinate the ribs:

  • Place the ribs in a bowl and add 1 tablespoon of fish sauce, 1 tablespoon of sugar, a little pepper, and minced garlic. Mix well and marinate for 15-20 minutes.

3. Fry the ribs:

  • Heat oil in a pan, add the ribs, and fry on medium heat until they turn golden brown on all sides. Remove from the pan and drain the oil.

4. Make the sweet and sour sauce:

  • Add 2-3 tablespoons of sugar to the pan and heat until it melts and turns a caramel color.
  • Add finely chopped tomato to the caramelized sugar and stir until the tomato softens.
  • Add 2-3 tablespoons of fish sauce, 1-2 tablespoons of vinegar or lime juice to the pan. You can add soy sauce if you prefer a darker sauce.
  • If you like it spicy, add finely chopped chili to the sauce.

5. Stir-fry the ribs with the sauce:

  • Put the fried ribs into the pan with the sauce and stir well to coat the ribs evenly.
  • Simmer on low heat for about 10 minutes until the sauce thickens and the ribs absorb the flavor.

6. Finish:

  • Adjust the seasoning to taste. Sprinkle chopped green onions if desired.
  • Arrange the ribs on a plate, garnish, and serve hot with steamed rice.
