Ingredients:

- Beef brisket, flank, or shank: 500g

- Fresh rice noodles: 1 kg
- Spring onions, cilantro, sawtooth coriander: a small bunch each
- Bean sprouts, Thai basil, mint (optional)
- Lime, fresh chili, garlic vinegar
Instructions:
Step 1: Prepare Ingredients
- Clean the bones: Rinse beef bones thoroughly with salted water. Bring a pot of water to a boil, blanch the bones for 2-3 minutes, and rinse under cold water.
- Grill aromatics: Char the ginger, onion, and shallots until fragrant and slightly blackened. Rinse, peel, and crush the ginger.
- Toast the spices: Toast cinnamon, star anise, cardamom, cloves, and coriander seeds in a dry pan until aromatic. Wrap them in a small cloth bag or tea infuser.
Step 2: Make the Broth
- Add the bones and 4-5 liters of water to a large pot. Add grilled aromatics and the spice bag.
- Bring to a boil and skim off the foam frequently to keep the broth clear. Lower the heat and simmer for 4-6 hours.
- After 2 hours, add the brisket or flank beef to the pot. Simmer until tender, remove, let it cool, and slice thinly.
- Season the broth with salt, fish sauce, rock sugar, and MSG to taste.

- Blanch fresh rice noodles in boiling water and drain.
